Enchiladas (Joyce’s recipe)

Sauce

1/2 cup oil
4 tbs flour
2 cups water
1 tbs chili powder
1 8oz can tomato sauce
Dash oregano, onion salt, garlic salt
1/2 cup grated cheddar cheese

Heat oil in sauce pan. Add flour. Dissolve chili powder in water and add to flour and oil. Add tomato sauce and spices. Add cheese. Simmer 30 minutes.

Meat Mixture

1 lb hamburger
1 pkg taco seasoning
1 can chopped olives
1 chopped onion
12 tortillas

Brown hamburger and taco seasoning. Add olives and onions. Dip tortillas in sauce. Fill with meat mixture. Roll up and place in cake pan and pour extra sauce over enchiladas. Top with grated cheese, bake at 350 for 15-20 minutes. Top with tomato, lettuce, and sour cream.
